We grow New Jersey Giant and New Jersey Supreme asparagus varieties, using organic farming practices. We pick our asparagus twice a day, entirely by hand, when the stalks are 6″-8″ in height at the peak of tenderness. If you are not familiar with the characteristics of fresh asparagus harvested in this manner, you are in for a treat! The two varieties that we grow are inherently sweet and succulent, but when harvested every twelve hours at this height, they are tender and sweet all the way to the end of the stalk. In other words, to enjoy them you do not need to remove any more of the stalk that the very, very, end; and that is only to remove any remaining dirt at the break. You also will not have to peel back any “stringy” parts – because there are none! And because every inch of the stalk is delectable, you get more for your money – you don’t have to throw away or “rehabilitate” any portion of what you paid for!
