You can't rush a good thing. It takes time and effort to get things right and that's how we do our barbecue: low and slow with tender loving care over fresh hickory wood giving our fresh meats a distinct smoke flavor and light pink color. We smoke today, for today. Which means, we sometimes run out of menu items. But, it's all for the good of America's greatest gift to the culinary universe: Real Barbecue!
Locally owned and operated, Merle's #1 Barbecue has been the Chicago area destination for fantastic barbecue since 1992. We're a short hop from Northwestern University, just East of Century Theatres, and next door to Evanston Athletic Club.
